Use a fork to poke holes in the sweet potatoes and place them on a microwave-safe plate. Microwave until tender and set aside.
In a medium bowl, combine the mayonnaise, Greek yogurt or light mayonnaise and lime juice. Stir in the green onions, cilantro and Parmesan or cotija cheese. Set aside.
Heat a large skillet over medium heat and melt the butter. Add the corn and cook for 2 minutes.
Add the jalapeño and cook for another 2 minutes, stirring frequently.
Stir in the garlic, chili powder, smoked paprika and salt. Cook until the corn begins to lightly brown.
Remove from heat and add the corn mixture to the mayo-yogurt mixture. Stir until well combined.

- 2 ears fresh corn on the cob, husked, corn removed from stalk or about 1 1/2 cups frozen or canned corn
- 1 jalapeno, seeds and pith discarded, minced
- 1 teaspoon minced garlic
- 1/4 teaspoon chili powder
- 1/4 teaspoon smoked paprika
