How to Make Sweet Potato Salsa

Preheat the oven to 400°F.

Peel, rinse, and cube the sweet potatoes into ¼-inch pieces. Toss with salt, pepper, chili powder, and olive oil, then spread on a baking sheet and roast for 20 minutes.

Peel and cube the mango, seed and cube the bell peppers, dice the onion, seed and dice the jalapeño, and finely chop the cilantro.

Once the sweet potatoes have cooled, combine them with the mango, peppers, onion, and jalapeño. Pour over the fresh-squeezed orange, lemon and lime juices, stir to combine, then chill before serving with chips or crackers.
