To make this easy sheet pan shrimp fajita recipe, you’ll need the following ingredients:
- green bell peppers
- yellow bell peppers
- lime
- medium red onion
- extra-virgin olive oil
- raw, peeled shrimp, fresh or frozen
- Cajun seasoning, divided
- salt
- ranch dressing
- flour tortillas
How to Make Shrimp Fajita Recipe
Preheat the oven to 450°F.
Wash and dry the bell peppers, onion, and lime. Trim, seed, and slice the bell peppers into thin strips, then transfer them to a large baking sheet.
Peel, halve, and slice the onion into thin pieces and add to the sheet. Drizzle with oil, toss to coat, and spread in an even layer. Bake for about 5 minutes until slightly softened.
If using frozen shrimp, rinse them under cold water in a colander to thaw slightly. Pat dry with a clean towel or paper towels.
Remove the baking sheet from the oven and arrange the shrimp over the veggies. Sprinkle with 4 teaspoons of Cajun seasoning and salt, toss to combine, and spread evenly. Return to the oven and bake for 5-7 minutes until the shrimp are cooked through and the veggies are tender.
