To make this Mexican lasagna, you’ll need the following ingredients:
- ground beef
- black beans
- chiles
- fire-roasted diced tomatoes
- whole kernel corn
- garlic powder
- onion powder
- taco seasoning
- shredded cheese
- tortillas
- fresh cilantro, for garnish
- sour cream, for serving
How to Make Mexican Lasagna
Preheat the oven to 350°F.
In a large skillet, brown the ground beef over medium heat, then drain the excess grease. Stir in the black beans, chiles with juices, one can of tomatoes with juices, drained corn, garlic powder, onion powder, and taco seasoning.
Open the second can of tomatoes, set aside half, and add the remaining half with its juices to the beef mixture. Mix well, then remove from heat.

In a 9×13-inch baking dish, layer six tortillas, slightly overlapping. Spread 1/3 of the beef mixture over the tortillas and top with 2 cups of shredded cheese. Repeat the layers twice more, then finish by topping with the reserved tomatoes.

- 1 can (15 ounces) whole kernel corn
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon taco seasoning
- 6 cups shredded cheese
- 18 taco-sized tortillas of choice
- fresh cilantro, for garnish
- sour cream, for serving
Instructions
