Sear the pork until browned on all sides, about 1-2 minutes per side, then transfer to a large, rimmed plate and set aside.
Repeat with another tablespoon of olive oil, the remaining pork, and garlic powder, seasoning again with salt and black pepper. Once seared, transfer to the plate with the rest of the pork and set aside.
Add the remaining olive oil to the Instant Pot®, along with the red onion and shallot. Cook, stirring frequently, until soft, about 3-4 minutes.
Deglaze the Instant Pot by adding the chicken broth and gently scraping the bottom with a plastic spatula to loosen any browned bits. Pour in the apple cider vinegar and 3/4 cup BBQ sauce. Return the seared pork and its juices to the pot, then cover and lock the lid in place.
Set the pressure valve to “sealing” and select the “Manual” option on the highest setting. Adjust the cook time to 50 minutes.
