Transfer the mixture into a lightly greased 9 x 7 baking dish. Top with shredded cheese and sprinkle the remaining bacon crumbles on top.
Bake for 10 minutes or until the cheese is melted and the bacon is crisp. Remove from the oven and let sit for a couple of minutes. Garnish with sliced green onions and enjoy!
Notes:
- Russet potatoes are ideal for a creamy mashed potato dish due to their high starch content.
- For a lighter version, omit the ¼ cup of butter before mashing.
- You can use alternative baking dish sizes like 9 x 9, 8 x 8, or 9 x 13, depending on the thickness you prefer for the casserole.
