How to Make Herb Stuffing
Preheat the oven to 375°F. Spread ripped or cubed bread on a large, rimmed baking sheet and bake for about 15 minutes, until dry. Let cool and keep the oven on.
In a heavy skillet over medium heat, melt butter and sauté the shallots and celery for 5-6 minutes. Add green onions, parsley, oregano, sage, thyme, garlic, salt, and pepper, and sauté for another 6-8 minutes until the celery is tender.
Generously grease a large skillet or ceramic baking dish. Place the bread cubes in a large bowl, add the warm vegetable mixture, and toss to combine.

In a medium bowl, whisk the eggs with 3/4 cup broth. Pour the egg mixture over the stuffing and toss to coat, then mix in the Parmesan cheese.
