In a large bowl, beat butter and granulated sugar until fluffy. Mix in the eggs and vanilla extract. In a medium bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, beating until well combined. Mix in the milk until the batter is smooth.
Pour half the batter into the prepared loaf pan. Spread half the apple mixture over the batter, then sprinkle with half the brown sugar mixture. Repeat with the remaining batter, apples, and brown sugar mixture. Lightly press the apples into the batter and use a knife to gently swirl the brown sugar mixture through the loaf.
