How to Make Honey Roasted Turkey Breast
Preheat oven to 500°F.
Season the turkey on both sides with salt and pepper and let sit at room temperature for 1 hour in a large roasting pan with a rack.
Make the Glaze:
In a medium saucepan over high heat, combine honey, orange juice, mustard, vinegar, salt, pepper, thyme, and garlic. Bring to a boil, then reduce heat to medium and simmer 15 minutes, or until reduced by two-thirds. Remove from heat and set aside.
Place the roasting pan in the oven and reduce the temperature to 350°F.
After 45 minutes, brush the turkey with a layer of glaze and cook 10 minutes. Repeat with a second layer of glaze and cook 10 more minutes. Brush on a final layer of glaze and continue cooking until the turkey reaches an internal temperature of 165°F.
Remove from the oven and let rest for 30 minutes.
Carve the turkey and drizzle with any remaining glaze before serving.
