For my particular roasted pear salad recipe, I recommend using balsamic vinegar, but you can always get more creative! A variety of dressings can complement the flavors well.
Balsamic Vinaigrette: The tangy sweetness of balsamic vinegar pairs nicely with the subtle sweetness of pears. You can make a simple vinaigrette with balsamic vinegar, olive oil, Dijon mustard, honey, salt and pepper.

How To Make Pear Salad
Preheat your oven to 375°F and prepare a large baking sheet with parchment paper or a Silpat® baking mat. Lay out the pear slices in a single layer, avoiding overcrowding. Brush them lightly with 2 tablespoons of olive oil and season with salt and pepper.
Roast the pears for about 15 minutes, then flip them and continue roasting until they are golden brown and tender, approximately 10-15 minutes more. Remove from the oven and let them cool slightly.

Meanwhile, in a small saucepan over medium heat, bring the balsamic vinegar to a boil, then reduce to a simmer. Stir frequently until it’s reduced to about 1/3 of its original volume, creating a thick, syrupy glaze. Keep it warm until serving.
In a large salad bowl, combine the arugula, roasted pear slices, and blue cheese. Toss with the remaining olive oil. Just before serving, drizzle the warm balsamic glaze over the salad. Enjoy immediately!
