  • 1 bag Success Brown Rice
  • 1 cup cooked green or brown lentils
  • 1 cup edamame, cooked, cooled and shelled
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup roasted almonds and sunflower seeds (optional)

Dressing:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

    1. Cook the rice as per the instructions on the package.
