How to Make Irish Apple Cake
Preheat oven to 375 F. Grease and flour 9-inch round springform pan
In a large bowl, sift together flour, cinnamon, cloves, nutmeg, and ginger. Using a fork, cut the butter into the mixture until it resembles crumbs. Add sugar and apples, mixing well.
Stir in eggs and half-and-half until the batter reaches a thick, dough-like consistency. Finally, pour the batter into the prepared pan.
To make topping: Mix together butter, flour, and sugar in a bowl until a crumbly mixture forms. Sprinkle this mixture on top of the batter in the pan.
Bake for 1 hour, checking the middle with a toothpick to ensure it’s fully cooked. If needed, bake for an additional 5-10 minutes. Allow the cake to cool on a rack before serving.
To make custard: Whisk together egg yolks and sugar until well combined. In a saucepan, bring the half-and-half to a boil.
Gradually add one spoonful of the hot half-and-half at a time to the egg mixture, whisking continuously as you add it.

After whisking the mixture together, return it to the saucepan and cook over medium heat, stirring constantly until it thickens, which should take about 4 minutes.
Remove the saucepan from the heat and whisk in the vanilla extract.
Serve custard over your Irish apple cake.
