Who wants to turn on the oven in the heat of summer? Not me!
We can actually watch the temperature rise on our thermostat when we turn on the oven during the summer. Ugh.
So I’m always on the lookout for ways to make an interesting meal without turning that sucker on.
Our easy chicken cranberry mandarin salad has been a personal favorite for a long time.
Summertime comes along and I start craving this sweet and tart salad!
My husband and I enjoy sitting out on our back deck enjoying this light meal and adding in the perfectly balanced flavor of Gold Peak® tea.
My husband likes the Sweet Tea while I prefer Unsweetened with a little bit of fresh lemon.
To make this meal extra easy, you can purchase a pre-cooked chicken from your local grocery store.
The moment I get home, I cut up the rotisserie chicken.
I make the salad for my husband and myself while the kids get fresh chicken and the sides.
An easy meal everyone will eat and absolutely no cooking. Heaven!
Easy Chicken Cranberry Mandarin Salad
- 2 cups cooked chicken
- 1/4 Ginger Sesame dressing (feel free to use any type of Asian-inspired dressing to match your personal taste)
- 1 12-ounce bag prepared salad greens
- 1 cup dried cranberries
- 1 cup thinly sliced celery
- 1 11-ounce can Mandarin oranges, drained
Note: We have nut allergies in our house. But for added crunch and flavor, you can add in 1/2 cup chopped pecans.
Chicken Mandarin Salad Directions:
Cut up the chicken into bite-sized portions and slice the celery. Drain the mandarin oranges well.
Add all ingredients and toss well. It’s that easy!
