- 2 tablespoons minced jalapeno pepper
- 1 large firm, ripe avocado, peeled, pitted and cut into bite-size pieces
- 1/2 cup chopped peanuts (optional)

To prepare the lime vinaigrette, whisk together olive oil, lime juice, honey, sea salt, and pepper in a medium bowl.
To make the salad, rinse the quinoa in a fine mesh strainer, then cook it in broth according to package instructions. Once cooked, let it cool and transfer it to a large bowl.
