Slow Cooker Pork Loin with Vegetables

Ingredients:

  • 2 pounds pork loin
  • salt
  • pepper
  • 1 large red onion
  • 1 1/2 pounds baby potatoes
  • 1 pound baby carrots
  • 4 garlic cloves, minced
  • 1 cup Musselman’s Apple Butter
  • 1/3 cup Dijon mustard
  • 1/3 cup soy sauce
  • 1 cup beef broth

Directions:

Step 1: Place large nonstick skillet over medium-high heat. (If using regular skillet, add 1 tablespoon oil.) Season pork loin with salt and pepper, and place in skillet.

Step 2: Sear pork loin on all sides to seal in juices, about 8-10 minutes.

Step 3: Peel onion and cut into large chunks. Cover bottom of large, 6-quart slow cooker with half the chopped onion, potatoes and carrots.

Step 4: Lay seared pork loin over top and surround with remaining vegetables.

Step 5: In small bowl, whisk together minced garlic, apple butter, mustard, soy sauce and broth. Pour mixture over pork and vegetables.

Step 6: Cover slow cooker and cook on low 8-10 hours or high 4-6 hours.

Step 7: Once potatoes are tender, cut tenderloin into thin slices and place on platter, surrounded by vegetables.

  1. Oh gosh does that ever look good! I love the idea of the apple butter; it’s so rich and thick and I bet it tasted wonderful in this – plus once I open a jar I’m really excited and use it several times, then maybe the next week once or twice, and then it tends to languish in the fridge. This would be a great way to ensure it doesn’t sit too long after I lose interest!

    It’s going on my must make list!

  12. This was a big hit at my house! My husband, son, his wife and 2 of my grandkids loved it! Every time one of my grandkids put food in their mouths I heard “mmmm”!! I had a 4 1/2Lb tender loin so I added extra veggies and used applesauce because the stores was out of apple butter. Next time I’ll have the apple butter and will definitely add even more onions along with the extra veggies. It filled an 8qt crockpot and was done at 7 1/2 hrs. We spend our Saturdays playing with our grandkids and watching college football (Go UGA) so anytime I can make a great meal with very little work is a win for me!
