My regular readers know my boys are home with me this summer… no summer camp for these kiddos.

And so we’ve been busy doing Camp Jenny. (What… did you think I was going to let them play video games all day?)

And so once a week we’ve been picking a recipe to try out… and this week, chocolate chip banana oatmeal cookies won out.

We had some overripe bananas sitting on the counter and I really didn’t want them to go to waste.

Why not put them in a cookie?!?

Ingredients:

  • 2 cups flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 6 Tbsp butter, softened
  • 6 Tbsp cream cheese
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 cup mashed overripe banana (approx. 1 large banana)
  • 1 cup old fashioned rolled oats
  • 1 cup milk chocolate chips

Note: If you want your cookies to look uniform, use a cookie scoop.

In my photos, we just used a large spoon to dole them out and you can see how textured they came out.

Unlike other cookies, these won’t spread out, so the way you put them on the cookie sheet is how they’re going to bake.

Also, I strongly recommend you use Silpat silicone baking sheets. I started using them years ago whenever I was baking cookies and it’s made all the difference.

Cookies on a tin

Directions for banana oatmeal cookies:

Preheat oven to 375 degrees.

In a medium mixing bowl, combine dry ingredients (flour, salt, baking soda, cinnamon).

In a large mixing bowl, combine butter, cream cheese and sugars.

Add egg, vanilla and mashed banana. Be sure to mix well, working out any large lumps.

Fold in oats and chocolate chips.

Using a large cookie scoop, drop onto cookie sheet.

Bake 10-12 minutes until lightly golden brown.
